Easy Eats: Topless Blueberry Pie

Our many trips to Maine for camp drop-offs usually result in cartons of fresh blueberries. We put them in our smoothies, on our waffles, and now, in this simple pie. This easy no-bake recipe is perfect for hot summer days when you don’t want to turn on the oven (other than to bake your crust). It can be made into one large pie or several smaller single-serve treats. It’s a great way to use up all of the fresh blueberries you have and keep the kids happy at the same time. Of course, the bright blue color is also perfect for any July 4th parties you may be attending. Serve on a red tray for a full patriotic display.

Topless Blueberry Pie

The easiest, fool-proof pie recipe out there
Total Time15 minutes

Ingredients

  • 4 cups fresh blueberries
  • ¾ cup white sugar
  • 3 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1 tbsp butter
  • 1 pie crust, baked

Instructions

  • In a saucepan, combine sugar, cornstarch and lemon juice. Stir in ¾ cup of water and 1 cup of blueberries. Cook and stir over medium heat, until thick, approximately 8 to 10 minutes.
  • Add butter and let cool about 5 minutes. Stir in remaining blueberries.
  • Pour into baked pie shell and cool in the refrigerator for 2 to 4 hours.
