Easy Eats: Easter Macaroon Nests

I went searching for a fun and easy dessert to make with my nieces this Easter and found these adorable coconut macaroon “nests.” They are a cinch to make, taste yummy, and look adorable too (dare I say whimsical). This simple recipe is relatively foolproof and can be baked, constructed, and eaten by the young ones in your family (or young at heart). Happy Easter!

Easter Macaroon Nests

Prep Time15 minutes
Cook Time15 minutes
cooling time20 minutes

Ingredients

  • 14 oz sweetened condensed milk
  • 1 tsp pure vanilla extract
  • ½ tsp kosher salt
  • 14 oz sweetened flaked coconut (4 ⅔ cups)
  • melted white chocolate for drizzling (keeps eggs in nest too).
  • 60 mini candy-coated chocolate eggs

Instructions

  • Heat oven to 350° and line 2 baking sheets with parchment paper.
  • In a large bowl, whisk condensed milk, vanilla, and salt together. Fold in coconut.
  • Drop 2-Tbsp mounds of dough onto sheets, 2 inches apart. Using a fork, spread each mount into roughly 2 ½ inch "nests".
  • Bake until golden brown around edges, about 14-16 minutes.
  • Let cool on sheets for 5 minutes, then cool on a rack for 20 minutes.
  • Drizzle melted chocolate and add 3 eggs to each nest.
