This past Easter I wanted to cook up a breakfast that was both simple to prepare and delicious to eat. After some online searching, I found this easy casserole that checks all the boxes. I have yet to feature a breakfast dish on Easy Eats, so here you go! This dish can also be made ahead of time and kept in the fridge overnight (just needs a little longer to cook). Ham & Cheese Breakfast Casserole

Course: Breakfast

Ingredients

  • 5 eggs, beaten
  • 2 cups bread, cubed
  • 1 cup milk
  • 1 cup ham, cubed
  • 2 cup cheddar cheese, shredded
  • 1 dash worcestershire sauce
  • ½ tsp onion powder
  • ¼ tsp salt
  • 1 dash pepper
  • cilantro or scallions as optional garnish

Instructions

  • Preheat oven to 350 degrees
  • Spray 8×8 casserole dish with cooking spray.
  • Combine all ingredients in casserole dish (start with wisking eggs) and mix well.
  • Bake covered casserole for 30-35 minutes.
  • Serve with fruit and a bloody Mary!
