Easy Eats: Asian Slaw Salad

I have to be careful with this recipe because it is a sacred drooled-over salad created by my good friend Barbra. While she is known primarily for her talents on the tennis court, she is also credited with the elevated Asian slaw that my friends and I love. I, however, do not have her mad skills in the kitchen (nor on the tennis court), so I am adjusting the recipe here to make it work for an Easy Eats post. Simply purchase the dressing and all of the components, already chopped, from Whole Foods. It’s healthy, tasty, crunchy, and savory–and impressive. Want to make it even better? Add grilled chicken or edamame. I guarantee this will be a crowd-pleaser at your next potluck or family dinner.

Asian Slaw Salad

Ingredients

  • 1 bag Asian inspired chopped slaw kit or coleslaw I like the Whole Foods option because it comes with chopped green onion, carrots, and cilantro.
  • 2 3 oz. packs crushed uncooked ramen noodles (hit with spoon while still in package) discard the seasoning mix
  • 1 cup thin sliced almonds you can always use less
  • ¼ cup sesame seeds for garnish

Instructions

  • Empty bags of slaw into a large salad bowl.
  • Add almonds and crushed ramen.
  • Add dressing, sprinkle with sesame seeds
  • Make into a meal by adding grilled chicken.
