Easy Eats: Alfredo Shrimp Cassserole

Up next for Easy Eats is one of my favorite kinds of meals– the dump recipe, where you simply dump all the ingredients in a dish and bake. Voilà! Dinner is served. And with cheesy pasta, this one is sure to please. Bake it, eat it now, or reheat it later for the teenager.

Alfredo Shrimp Scampi Casserole

Ingredients

  • 4 Tbsp unsalted butter diced into cubes
  • 12 ounces of rotini pasta
  • 1 pound frozen peeled and deveined medium shrimp
  • 2 cups chicken broth
  • ¼ tsp red pepper flakes
  • 2 cloves minced garlic
  • ½ cup heavy cream, warmed
  • ½ cup grated Parmesan
  • cup chopped fresh parsley
  • Zest of ½ lemon

Instructions

  • Preheat the oven to 425 degrees and generously grease the bottom and sides of a 9-by-13-inch casserole.
  • Spread the rotini in an even layer at the bottom of the dish. Scatter the shrimp over top and dot it with the cubes of butter. Pour in the broth, then sprinkle with the red pepper flakes, garlic, lemon zest, 2 teaspoons salt, and some black pepper. Cover with aluminum foil and bake until the pasta is al dente, about 25 minutes.
  • Meanwhile, in a small bowl, toss together the Parmesan and parsley. When the pasta is done, stir in the warm cream and top with the cheese mixture.
