Kathleen is a lifestyle blogger, who I connected with on Instagram a few years ago. We share book recommendations, favorite rosé wines, and now simple recipes (we are also fellow dog moms)! She is a much better cook than I am, so I usually just drool over her food posts. But this yummy appetizer caught my eye since I am a buffalo chicken wing lover. She shared this recipe on her blog, Grey Stripes & Denim last fall and I loved its simplicity so much, I asked her to be a guest blogger for W&W. It’s football season, so bring on the snacks! My Buffalo Chicken Dippers are great to serve when you have a crowd. By using already prepared or store-bought items, it cuts down on prep time tremendously. Buying a rotisserie chicken is the best way to go, then pair it with your favorite buffalo sauce (mine is garlic parmesan). The best part about this recipe is that you can experiment- have fun with it and try making it with all different types of sauces. Don’t forget to pair it with some blue cheese dip! –Kathleen

Buffalo Chicken Dippers
Ingredients
- 1 rotisserie chicken, shredded
- ½ bar of cream cheese
- 1-1½ cups of your favorite buffalo sauce
- 1 pkg. egg roll wrappers
- Olive Oil
Instructions
- Preheat oven to 400 degrees.
- Mix the shredded chicken, cream cheese & buffalo sauce in a mixing bowl.
- Fill egg roll wrappers with the shredded chicken mixture by using the directions found on the back of the egg roll package.
- Grease a cookie sheet & place all rolled chicken dippers on the sheet (might need more than one sheet).
- Brush the top of the dippers lightly with olive oil.
- Bake 10-12 minutes or until slightly browned on top.
- Serve with Blue Cheese Dip (I love Trader Joe's)
