Dirty Martini Pasta

Ingredients

  • 1 lb spaghetti, linguini or any long pasta
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 3-4 cloves garlic
  • 20-24 chopped green olives (10 oz. jar)
  • 2 lemons (both zested, one juiced)
  • 2 tbsp gin
  • 3 tbsp olive brine from the jar
  • optional: crumbled bleu cheese

Instructions

  • Cook and drain pasta, add a tbsp of butter.
  • While pasta cooks, heat oil in saucepan and saute garlic for one minute.
  • Add in the lemon zest and chopped olives. Cook until garlic is golden.
  • Add gin to deglaze pan. Then add the olive brine, lemon juice, and 3 tbsp of butter.
  • Add cooked pasta to the sauce, salt and pepper to taste, and toss to combine.
  • Top with more chopped olives, lemon zest and blue cheese.
