California Roll Salad

Ingredients

  • 1-2 heads Boston lettuce, chopped
  • cup cooked brown rice
  • 2 Persian cucumbers, sliced into ribbons
  • 1 avocado, diced
  • 8 oz surimi or crabmeat
  • 1 scallion, chopped
  • 2 Tbsp mayonnaise
  • 1 Tbsp sriracha
  • 1 Tbsp fresh lemon juice
  • Furikake seasoning optional

Instructions

  • In a small bowl, whisk together mayo, sriracha, lemon juice and pinch of salt
  • Divide lettuce, rice, cucumber and avocado among bowls
  • Top with crabmeat (or surimi) and drizzle with dressing
