During the summer months, we often opt out of a heavy meal and go for a big salad instead. A lighter option is often just what I am craving on hot nights. This salad is a perfect alternative since it has a nice portion of protein in the chicken and healthy fats in the avocado. It’s also super easy to make–which is, of course, key for me. I like to shop at Trader Joe’s where I can grab pre-grilled chicken (yes, I do this), organic avocados and romaine, pre-sliced mango and chopped onions. I should also mention that this is a low cal option, at only 300 calories per serving (depending on the dressing– we prefer Newman’s Oil & Vinegar). Presto, light summer supper is served.
Grilled chicken, mango and avocado salad
Ingredients
- 1 lb. grilled chicken breast
- 1 cup diced avocado
- 1 cup diced mango
- 6 cups chopped romaine or butter lettuce
- 4 tbsp chopped red onion
- viniagrette dressing
Instructions
- Chop up all ingredients and mix together in large salad bowl.
- Dress with viniagrette
