When I started this blog, I clearly stated that there would be no recipes, no cooking advice and no mention of food preparation. Well, I am eating my words (pun intended). However, this popular blog category, called Easy Eats, is far from gourmet. There are no long lists of steps and no exotic ingredients. In fact, most recipes will require minimal kitchen savvy and take very little time to prepare. For this Easy Eats, I had to refer to my acrylic recipe file box, chock full of pieces of paper collected over the years. When I finally found the small yellow sticky note I chuckled because it was clearly written by my childhood friend Meg (who shares my cooking challenges). She passed along this simple meal to me when my three kids were all under the age of 10 and I was tired of the chicken nugget route. The ingredients sound random on their own but taste so good when it’s all cooked and gooey. I usually serve over rice with a side of pineapple chunks. Think of it as an easier version of Chinese orange chicken.
Polynesian Chicken
Ingredients
- 5 boneless chicken breasts
- 1 package of onion soup mix
- 8 oz. jar of apricot jam
- 1 cup mayonnaise
- 1/2 cup chili sauce
- 9x13 glass casserole dish
Instructions
- wash and dry chicken and place in dish
- mix all other ingredients in a bowl
- cover chicken breasts with mixture
- bake uncovered for 1 hour at 375 degrees
- serve with rice and fresh pineapple
