This recipe was sent to me by a good friend who is familiar with my martini obsession. Apparently, it was first introduced by TikTok home chef @legallyhealthyblonde, who is considered the creator of the recipe: “I know I’m not the only one obsessed with dirty martinis and obsessed with pasta, and so I am trusting this going to find the right people.” And it found me, and I am thankful– it is right up my alley. Not only do I love a good briney meal, but this is so simple and quick– an Easy Eats for sure!
Dirty Martini Pasta
Ingredients
- 1 lb spaghetti, linguini or any long pasta
- 4 tbsp butter
- 2 tbsp olive oil
- 3-4 cloves garlic
- 20-24 chopped green olives (10 oz. jar)
- 2 lemons (both zested, one juiced)
- 2 tbsp gin
- 3 tbsp olive brine from the jar
- optional: crumbled bleu cheese
Instructions
- Cook and drain pasta, add a tbsp of butter.
- While pasta cooks, heat oil in saucepan and saute garlic for one minute.
- Add in the lemon zest and chopped olives. Cook until garlic is golden.
- Add gin to deglaze pan. Then add the olive brine, lemon juice, and 3 tbsp of butter.
- Add cooked pasta to the sauce, salt and pepper to taste, and toss to combine.
- Top with more chopped olives, lemon zest and blue cheese.
