By now you know that I am challenged when it comes to cooking and we often opt for ordering in dinner. In an effort to make more meals at home, I searched for an easy alternative to the Chinese takeout option. I started with my trusted Croc-Pot cookbook called Not Your Mother’s Slow Cooker Cookbook. This meal uses items that most everyone will have on hand and takes less than 10 minutes to prepare. It also satisfies the desire for something tangy and sweet, but healthier than the delivery version. Let me know what you think!
Croc-Pot Teriyaki Chicken
Ingredients
- 1 lb boneless chicken breasts or thighs cut into cubes
- 1 cup chicken broth
- ½ cup teriyaki sauce If you don't have teriyaki at home, just mix up some soy sauce and honey
- 5 tbsp brown sugar
- 3 garlic cloves, minced
- 3 tbsp cornstarch
Instructions
- Place chicken in slow cooker
- Add remaining ingredients (except cornstarch) and stir
- Cook on LOW for 4 hours
- Mix cornstarch with 3 Tbs water and pour slowly into cooker
- Continue to cook for 30 minutes
- Serve over white rice, sprinkle with sesame seeds
