I saw this recipe in a magazine recently, and it grabbed my attention, simply because who doesn’t love sushi? This salad incorporates all of the popular California roll ingredients and serves them up in a big bowl of goodness! You could also try it with sushi-grade tuna or a lighter ginger-soy dressing. Bon Apetit!
California Roll Salad
Ingredients
- 1-2 heads Boston lettuce, chopped
- 1½ cup cooked brown rice
- 2 Persian cucumbers, sliced into ribbons
- 1 avocado, diced
- 8 oz surimi or crabmeat
- 1 scallion, chopped
- 2 Tbsp mayonnaise
- 1 Tbsp sriracha
- 1 Tbsp fresh lemon juice
- Furikake seasoning optional
Instructions
- In a small bowl, whisk together mayo, sriracha, lemon juice and pinch of salt
- Divide lettuce, rice, cucumber and avocado among bowls
- Top with crabmeat (or surimi) and drizzle with dressing
