Bored with my regular dinner rotation, I recently reached out to my friend Brigitte to ask for a simple recipe recommendation (I follow her Instagram @ezpz.kitchen, and she is always posting videos and instructions for easy dinners). She had just made this easy BBQ rubbed salmon recipe for her family and it was a hit, so she shared it with me. Luckily, our kids love salmon so this was perfect for us to try. Since this meal is so simple, it also fits the criteria for an Easy Eats post, and just in time for the long weekend. We like Jasmine rice as a starchy side dish and I also added avocado to the slaw like Brigitte recommended. Give the salmon a try this Memorial Day weekend! Serve with a crisp Sauvignon Blanc- cheers!
Bbq rubbed Salmon with Mango Slaw
Ingredients
- 1 Tbs brown sugar
- 2 tsp smoked paprika
- 2 tsp onion powder
- 1 tsp garlic powder
- 1 tsp chili powder
- 1.2 tsp salt
- 4 Tbs olive oil
- 4 six oz. pieces of salmon
- 1 cup shredded cabbage (Trader Joe's has coleslaw kit)
- 1/2 cup chopped cilantro
- 1/2 of one jalapeno, minced
- 1 cup chopped mango
- 2 Tbs lime juice
- large pinch of kosher salt
Instructions
Salmon:
- Preheat over to 450°F.
- In a small bowl combine the brown sugar, smoked paprika, onion powder, garlic powder, chili powder, salt, and olive oil. Mix well.
- Lay the salmon on a parchment-lined baking sheet. Brush the salmon with the BBQ seasoning mixture and roast salmon for about 8 to 11 minutes or until the tip of a knife can be inserted into the salmon without any resistance.
Mango Slaw
- In a medium bowl combine the cabbage, jalapeño, cilantro, mango, lime juice, and salt. Mix well.
Serve with jasmine or coconut jasmine rice!
Notes
Slaw also could include avocado and red onion
Serve with a chilled Sauvignon Blanc
