It’s time to take advantage of the late summer tomatoes with a simple, tasty salsa. My kids love the addition of the sweet pineapple, I love the creamy feta, and everyone likes the spicy combo of tomatoes, onions, and jalapenos! I also like the versatility of this salsa– use on burgers, fish, or with chips as a dip. Enjoy!
Pineapple Feta Salsa
Ingredients
- 6 tomatoes
- 1 cup crumbled feta cheese
- ½ cup minced fresh basil
- ½ cup canned crushed pineapple
- ½ cup chopped red onions
- 2 jalapeno peppers, seeded and finely chopped
- ¼ cup lemon juice
- 2 tsp lemon zest
- 1 tsp salt and pepper
Instructions
- Combine all ingredients in a bowl and mix
- Serve with tortilla chips, pita chips or use as a condiment
