This super simple summer appetizer is a Medina family favorite. My mom makes this dip all the time for cocktails in Westhampton and it’s always the first to be devoured. With just three ingredients and 5 min of prep, this should be an Easy Eats Hall of Fame entry. It’s also a cinch to remember because it’s 2 cups for each ingredient! I know we have some Fourth of July celebrating to do, so go ahead and offer to bring this dip to the next BBQ you are invited to. Even if you don’t like onions, you will dig this! Pair the warm gooey dip with some patriotic towels and a chic baking dish and wait for the compliments to start pouring in. Don’t worry Emory (my niece), Mom will make this dish just for you in a few short weeks!
Vidalia Onion Dip
Ingredients
- 2 cups Vidalia (or sweet) onion, chopped 2-3 onions
- 2 cups Mayonnaise
- 2 cups Swiss cheese, grated
Instructions
- Preheat oven to 350 degrees
- Prepare a 2 quart baking dish with cooking spray
- Mix all ingredients in a bowl and then transfer to the baking dish
- Bake for approximately 30-45, until the top is slightly brown
- Serve with tortilla chips or Ritz Crackers
