When I started this blog, I clearly stated that there would be no recipes, no cooking advice and no mention of food preparation. Well, I am eating my words (pun intended). However, this new blog category, called Easy Eats, will be far from gourmet. There will be no long lists of steps and no exotic ingredients. In fact, most recipes will require minimal kitchen savvy and take very little time to prepare. As a mother of 3 kids, who have activities and afterschool sports, cooking can often take a backseat. I love it when I find a dish that is easy to make, pleases everyone and can be reheated at a later date or time. Let me repeat– I am not a good cook. I am not a patient cook. And, I am not at all interested in learning how to cook. If you can relate, then you will like this first installment of Easy Eats: Alfredo Chicken and Broccoli. Alfredo Chicken & Broccoli

Alfredo Chicken & Broccoli

Prep Time: 5 minutes
Cook Time: 40 minutes
Total Time: 45 minutes

Ingredients

  • 4 skinless chicken breasts
  • 1 bag broccoli florets
  • 1 12 oz. jar Alfredo sauce Newman's is great
  • 1/2 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 1 9x13 glass Pyrex baking dish

Instructions

  1. Preheat oven to 400 degrees
  2. Spoon out 1/3 of alfredo sauce to cover the bottom of pyrex dish
  3. Lay washed chicken breasts in dish and sprinkle with salt and pepper
  4. Sprinkle broccoli florets all over chicken and dish
  5. Use remaining 2/3 jar of alfredo to cover chicken and broccoli
  6. Bake in the oven for 30 minutes at 400 degrees
  7. Remove from oven and sprinkle bread crumbs and parmesan cheese over entire dish. Return to oven for 10 more minutes.

Notes

Alfredo sauces vary and some are very runny. The first time I made this it was too saucy, so now I like to use a thicker alfredo (Newman's works for us). Also, some love the sauce and some like the broccoli without it, so I always leave a corner of the dish without much alfredo.
